This may sound off the wall but I think baking has just taught me a life lesson.

I started to bake with my mother at a young age. She always found a way to make it fun. I loved to add the chips to the chocolate chip cookies and kneed the dough with my hands. She really did her best to teach me the lessons of baking but I really had, and still have, a tough time following the directions to the letter. I always would add the right ingredients but maybe not in the order recommended in the recipe. Following the rules was hard but eventually I was making cookies that looked like the pictures. It really gave me confidence to continue learning more recipes - that was until I tried to make a cookie like the one you can get at Levain Bakery in Manhattan. I found this copycat recipe and followed the directions, but they just never came out right. Either they were too hard or too dry or just not tasty enough. I didn't get it. I was following the rules and doing what has expected but they still didn't come out right. I started to make adjustments not drastic ones but minor changes. I tried to perfect this recipe thirty times. Finally, I realized the ingredient I was missing was following my instincts and own creativity. So I made adjustments, trusted my gut and finally FINALLY made the perfect cookie. I even think it trumps Levain's.

My VALSECRET: Rules are there for a reason but don't feel like you need to live your life by the steps laid out for you to follow. Sometimes you need to follow your instincts. I did and now I have an amazing cookie that I'm proud of. Taking a year to perfect this recipe has also taught me that you really can do anything you put your mind to. I know people say it all the time but it is true.

I wanted to make the BEST chocolate chip, peanut butter and walnut cookie and I did. It took time, patience, trial and error and most importantly creativity. I'm now encouraged to start looking at my own life differently.

Now I'm planning on adjusting my career path and perfecting my recipe for a success. Maybe this will also encourage you to be confident that you too can do anything you put your mind to.

This is great Jamie. Sometimes, you need to think outside the box. No pun intended. Your clarity of confidence to take chances and go with your gut all came from a cookie. The cookies looks delicious. Pass some over! ;)
